- Lifting the dome too early. Seeds need pressure and darkness to push roots down and shoots up. Most varieties need at least 3 to 4 days under a weighted dome before they're ready for light. Lifting it on day 2 because you're curious produces leggy, weak seedlings.
- Harvesting at the wrong time. Cut microgreens when the first true leaves are just beginning to appear or when the cotyledons are fully open — depending on variety. For sunflower, that's usually day 10 to 12. Radish can be ready by day 7. Harvest too early and you lose yield; too late and they start to lose flavor and get bitter.
- Ignoring airflow. Microgreens need moving air. A small fan on low, running a few hours a day, does more to prevent mold than almost anything else. A closed room with no air circulation will cause problems even if you're watering correctly.
Notes from Growing Both on a Working Scale
When we've run both sprouts and microgreens at the same time, the logistics are genuinely different. Sprouts need attention twice a day, every day, without much flexibility. Miss a rinse cycle during a hot July afternoon and you'll know by the smell that evening. The turnaround is fast, which is useful, but the rhythm is unforgiving.
Microgreens require more upfront setup — trays, medium, a light source if you're growing indoors year-round — but the daily time commitment during the grow cycle is lower. Bottom water once a day, check for mold, make sure the fan is running. The main labor comes at harvest and wash time.
One thing that catches people off guard: alfalfa microgreens (as opposed to alfalfa sprouts) are genuinely difficult to grow well. The seeds are tiny, the stems are thin, and they need careful seeding to avoid collapse. If you want to grow alfalfa specifically, the sprout method is more forgiving and produces a better result for home use. If you want to grow microgreens, start with sunflower, peas, or radish — varieties that are harder to kill and faster to teach you what you need to know.
